Chocolate peanut butter squares


I made these squares for my clients as a Christmas gift and they went down so well a few of them asked for the recipe. Try making these over the weekend ready for next week!

Ingredients:

Serves: 15

• 1 cup mixed nuts of your choice (almonds, pecans, walnuts, brazils, cashews, blanched hazelnuts are all good) • 1 pack of pitted medjool dates (200g, 8-10 dates) • 1/4 cup peanut flour • 1/4 cup raw cacao powder • 1/4 cup oats • 1/4 cup desiccated coconut (optional) • 1 tbsp. peanut butter • 2 tbsp. coconut oil, melted • 1 tsp. honey

Topping: • Melted dark choc (70%+) 50g • Desiccated coconut (optional)

Method:

• Blend the nuts first so they are quite fine, then add the dates and blend together • Add the rest of the dry ingredients next and blend until well combined • Finally blend in peanut butter, oil and honey - hopefully it starts to clump and look sticky - sometimes adding a tiny bit of water helps • Transfer mix to a pan or container lined with greaseproof paper and push it down with hands or spoon to form a solid slab - freeze for 20 mins or so • Melt some dark chocolate and pour over the top, sprinkle with desiccated coconut and pop back in the freezer just to set the chocolate - don’t leave it too long or it will crack when you cut it! • Remove and cut into squares - I like to store it in the freezer and take one out when I want it :)
