Chocolate-mint Snack Bars
Getting ready for the week ahead with some mint chocolate snack bars. I used to make these into balls but can't be bothered with the mess - bars are so quick and easy! I love anything mint chocolate but you can omit the mint if you're not keen.
Ingredients:
1 cup nuts of your choice (I used cashews and almonds today)
12 dates or 6 medjool dates
1/4 cup cacao powder + 1tbsp to taste
1 tbsp. peanut butter
1 tbsp. melted coconut oil
1/2 - 1 tsp. mint extract to taste (optional)
Method:
Blend the nuts to a fine powder first, then blend in the dates until well combined.
Add everything else and blend until the mixture starts to clump (you may need to add a tiny bit of water here - I used 1 tsp.)
Line a baking dish with greaseproof paper and push the mixture down into the bottom to form a slab
Pop in the freezer for 30 mins, then slice into 10 squares and keep in the fridge or freezer
